can't get you outta my head

I've been discovering a lot of new, really good music lately and I decided it's quite necessary to have a music post every week or so. After all, good music is almost as equal as good food, right? Since I can't seem to figure out how to just post a song at the moment, I'll post the video of the song that I currently can't get out of my head.

If I could go out to lunch every day, I would. There's just something about making lunch that I absolutely despise. When I was doing my internship, I would bring my lunch almost every day and every night I would stand in front of the fridge staring at my options. For the most part, I packed snacks and would just eat a little at a time throughout the day instead of eating one big lunch. Yogurt, nuts, tortilla chips or fruit are all good choices for snacking. But now that I'm home around lunch time, I always find it a struggle to find something satisfying for lunch without getting too complicated. Enter: delicious, easy sandwich made from leftovers.

so good

While we're on the subject of all things good...how good is this?

pizza?

One of the best things in the world, hands down. What makes it even better? Taking the traditional pizza and changing it up. When you put new things on your pizza that you never thought should go on pizza and it ends up tasting amazing. Every once in awhile, in my house, we have a "build your own pizza" night and put everything from sweet potatoes, arugula, pears and parsnips to chocolate and bacon (yes) on our pizzas. It tends to get a bit messy in the kitchen, but it never fails to be delicious.

tomatoes & mushrooms (roasted at 375 with olive oil, salt and pepper), tomato sauce and mozzarella cheese

olive oil, brie cheese slices, arugula, bacon and chocolate chips (photo taken before baking)

olive oil, pear slices, red onion, arugula, prosciutto, gorgonzola and parmesan cheese

Speaking of delicious pizza, putting sweet potatoes and parsnips on our pizzas was inspired by this pizza (sweet potatoes, roasted parsnips, caramelized onions, roasted garlic, fresh mozzarella and shaved fennel drizzled with reduced balsamic vinegar and parmesan cheese) which originated at this amazing pizza place, located in Hudson, NY, Great Barrington, MA and Pittsfield, MA.

my favorite

Lately, I've been drinking iced coffees like a mad woman. Who drinks hot coffee during the summer anyway? I mean really. But, today I was just craving something a little different.

For my usual iced coffee I brew some coffee, add a little sugar, and pour it over a glass of ice with a bit of milk. This time I decided to add some chocolate gelato and blended it all together instead. The gelato I used is from a local dairy farm that makes the most amazing gelato. I specifically go to the farmer's market in my area on Wednesdays just to have some, but they also sell it by the pint in some stores. Of course, you could use any gelato/ice cream of your choice. The milk I used is what my family has been drinking lately. It's from a farm in our area, and I've really come to love it. Their whole milk is so delicious. It even comes with a creamline top, which may sound weird but, it's not. If you're ever in the hudson valley area and can get your hands on this whole milk, do it. And while you're at it, get their chocolate milk as well, its like dessert in a bottle.
