One of the best things in the world, hands down. What makes it even better? Taking the traditional pizza and changing it up. When you put new things on your pizza that you never thought should go on pizza and it ends up tasting amazing. Every once in awhile, in my house, we have a "build your own pizza" night and put everything from sweet potatoes, arugula, pears and parsnips to chocolate and bacon (yes) on our pizzas. It tends to get a bit messy in the kitchen, but it never fails to be delicious.
tomatoes & mushrooms (roasted at 375 with olive oil, salt and pepper), tomato sauce and mozzarella cheese
olive oil, pear slices, red onion, arugula, prosciutto, gorgonzola and parmesan cheese
Speaking of delicious pizza, putting sweet potatoes and parsnips on our pizzas was inspired by this pizza (sweet potatoes, roasted parsnips, caramelized onions, roasted garlic, fresh mozzarella and shaved fennel drizzled with reduced balsamic vinegar and parmesan cheese) which originated at this amazing pizza place, located in Hudson, NY, Great Barrington, MA and Pittsfield, MA.
